It’s an hour to lunch time here and after seeing this recipe I’m thinking there is just enough time to run to the farmer’s market for a few special ingredients.
I have a new favourite vegetable.
Mini sweet peppers. Oh my. Now I want them on everything.
Their crispness and slight sweetness complement the soft raspberries, while the almonds provide a nice crunch, and the Romano cheese adds some richness to the salad.
The colourfulness of this salad will likely draw envious comments from your lunch partners. You have been warned.
1 c romaine lettuce, shredded
1 mini sweet red pepper, sliced
1 mini sweet yellow pepper, sliced
1 mini sweet orange pepper, sliced
4 cherry tomatoes
1/4 c fresh raspberries
1 Tbsp Romano cheese, shredded
2 Tbsp dry-roasted almonds
1 Tbsp light raspberry vinaigrette dressing
Servings: 1 salad
Combine the lettuce, peppers, tomato, raspberries, cheese, and almonds in a small bowl. Toss to combine. Drizzle with raspberry vinaigrette. Pack for lunch and enjoy!
